Upon completion of this course, students will be able to explain the fundamental principles of biochemistry as they relate to human nutrition, including the metabolism of macronutrients (carbohydrates, proteins, and lipids) and micronutrients (vitamins and minerals). They will be able to describe the processes of nutrient digestion, absorption, and utilization, discuss the regulatory roles of enzymes and hormones, and relate biochemical mechanisms to human health. This course provides a solid foundation for advanced study in nutritional biochemistry and related health sciences.
